I made cajun pork rice in the Instant Pot the other day, and it remains very delicious. I have learned a lot about cooking over the last few years, but it was the lockdown that really cemented my skills. Like everyone else, the challenge is time. I’m thinking about trying some more ambitious dinners and maybe even expanding into desserts. Might as well, it has gotten hella expensive to eat out.
