That groundhog better not see his damn shadow tomorrow.

I kid. Groundhog Day is nice, though, in that it’s an acknowledgment that we’re all sick of winter and hopefully the end will be in sight.

I made a delightful and large batch of pepper steak in the instant pot last night, something like 12 servings. It took longer than I would have liked, but we have food I think for the rest of the week if we want it. I have a superstition which says that if the first recipe I try in a new cookbook is a success that it bodes well for that cookbook working out long term. (This cookbook was a Christmas gift from my family.)

And despite the time it took, I still had plenty of evening left afterwards. I just have to remember to balance afternoons where I stay a little late at work with smaller recipes.
